We have done our first on-line olive oil testing course. Thanks to our great teacher Carlotta from the ONAOO school, connected via Skype from Imperia, we learnt to recognize some of the most important defects that should be absent in extra virgin olive oils like: fusty, muddy, winey-vinegary or rancid. We also learnt about the positive attributes that characterize extra virgin olive oil like being fruity, bitter and pungent.
